Carol Victor

Carol Victor of Westfield died June 25, 2012.

A registered dietician, Mrs. Victor taught bio-chemical nutrition at Kean College. She was also published in the Journal of Renal Nutrition, where she brought to the forefront the benefits of a low-protein diet in the treatment of kidney disease. She continued her research to create post-transplant diet and nutrition guidelines for the National Institute of Health.

She graduated from Cornell University’s class of 1955. She was a lifelong active member of Alpha Epsilon Phi. She then completed her master’s degree and continued her education toward her doctorate at Princeton and Rutgers universities.

She was also an accomplished pianist with professional recordings.

She is survived by her husband of 58 years, Warren; two daughters Jill Morton of Coral Springs, Fla., and Terri Seeley of Short Hills; and six grandchildren.

Services were held June 27 with arrangements by J.L. Apter Memorial Chapels of Cedar Grove. Memorial contributions may be made to the Kidney Registry (http://www.kidneyregistry.org).
